It’s Mango season! That means Mango’s are on sale everywhere. And I recently purchased these juicy, lip smacking beauties for 69 cents each! Score! Making this yummy Mango Salsa a super budget friendly treat.

I just love the taste of sweet, ripe mangos. They can be used in so many different ways. They’re great for both sweet and savory dishes and they’re super healthy. This superfruit contains more than 20 different vitamins and minerals. Just one cup of mango contains 100% of you vitamin C intake for the day and 35% of daily vitamin A.

So, go ahead and eat those tacos and your chips and salsa. They’re healthy! This salsa goes great with plantain chips as well as tortilla chips. Try it with Trader Joe’s spicy jerk seasoned plantain chips. It’s Amazing! The spicy jerk seasoned chips are the perfect compliment to the sweet/acidic mango salsa.

Speaking of jerk seasoning, this salsa would be incredible with some jerk seasoned grilled chicken. Yum! Or serve it with these Slow-Cooker Pork Carnitas

No matter how you serve it, this delicious salsa will be a hit. I could it it straight out of the bowl by the spoonful! It’s also great tossed into a big green salad. Love it! Get ya some Plantain Chips and start dippin’! Yum

Ingredients

  • 2 Mangos, peeled and diced
  • 3 tablespoons red onion, minced
  • 2 tablespoons cilantro, chopped
  • 1/2 jalapeno pepper, seeds removed and minced
  • 1 tablespoon fresh squeezed lime juice
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon smoked paprika

Instructions

  • Place all ingredients in a bowl and stir well to combine.
  • Chill. Serve with chips or add to tacos or grilled meats

    Very interesting! I expected your salsa to be about 50% tomatoes, but yours is all mango! Brilliant and fabulous!!!
