1mediumonion, small diced
1/2cupsweet yellow peppers, small diced
1/4tspsesame oil
1/2cupketchup
1/2 cupbeef or vegetable broth
2tablespoonssoy sauce
2tablespoonsthai sweet chili sauce
2tablespoonsbrown sugar
1tablespoonseasoned rice wine vinegar
1tablespoonworcestershire sauce
1/2teaspoonchili powder
1/2teaspoonsmoked paprika
1/2teaspooncoriander
1/4teaspoonblack pepper
For the Peanut Slaw
1packagekale slaw or regular if you prefer
1/2cupgood quality mayonnaiseHellmans or Dukes
2tablespoonsall natural peanut butter
1tablespoonseasoned rice wine vinegar
1tablespoon soy sauce
1tablespoonsugar
1teaspoonlime juice
chopped salted peanuts for garnish and crunch
Instructions
For the Meat Mixture
In a pan, cook ground beef, onions and peppers together until meat is cooked through. Skim off any extra fat
Add remaining ingredients and stir to combine. Simmer over low/medium heat until the meat has soaked up most of the juices.
For the Slaw
In a medium/large bowl add mayo, peanut butter, vinegar, soy sauce, sugar and lime juice. Whisk together until well combined. Add the bag of slaw and toss until well coated.
To assemble the sloppy joes
Take four warmed sesame seed bun. Place on four separate plates. Top the bottom half of each with equal portions for the meat mixture. Then top with the slaw mixture. Sprinkle with the chopped peanuts and then top with the top bun.Enjoy!
