Ingredients

  • 1 pound lean ground beef
  • 1 medium onion, small diced
  • 1/2 cup sweet yellow peppers, small diced
  • 1/4 tsp sesame oil
  • 1/2 cup ketchup
  • 1/2 cup beef or vegetable broth
  • 2 tablespoons soy sauce
  • 2 tablespoons thai sweet chili sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon seasoned rice wine vinegar
  • 1 tablespoon worcestershire sauce
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon coriander
  • 1/4 teaspoon black pepper

For the Peanut Slaw

  • 1 package kale slaw or regular if you prefer
  • 1/2 cup good quality mayonnaise Hellmans or Dukes
  • 2 tablespoons all natural peanut butter
  • 1 tablespoon seasoned rice wine vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon sugar
  • 1 teaspoon lime juice
  • chopped salted peanuts for garnish and crunch

Instructions

For the Meat Mixture

  • In a pan, cook ground beef, onions and peppers together until meat is cooked through. Skim off any extra fat
  • Add remaining ingredients and stir to combine. Simmer over low/medium heat until the meat has soaked up most of the juices.

For the Slaw

  • In a medium/large bowl add mayo, peanut butter, vinegar, soy sauce, sugar and lime juice. Whisk together until well combined. Add the bag of slaw and toss until well coated.

To assemble the sloppy joes

  • Take four warmed sesame seed bun. Place on four separate plates. Top the bottom half of each with equal portions for the meat mixture. Then top with the slaw mixture. Sprinkle with the chopped peanuts and then top with the top bun.
