Ingredients

For the Salad:

  • 1 pint organic heirloom cherry tomatoes, washed and cut in half
  • 1 Avocado, diced (peel and pit removed
  • 1/2 large sweet onion julienne cut

For the Cilantro Lime Dressing:

  • 1 tablespoon fresh squeezed lime juice
  • 1 tablespoon red wine vinegar
  • 1/4 cup olive oil
  • 2 cloves fresh garlic, minced
  • 1 tablespoon fresh cilantro, minced
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon smoked paprika
  • freshly ground black pepper, to taste

Instructions

For the salad:

  • Put the halved tomatoes, diced avocado and julienne onion in a bowl
  • Prepare the dressing as directed below. Pour dressing over the tomato mixture and gently toss to coat.
  • .Adjust salt and pepper if needed. Garnish with some cilantro. Enjoy!

For the dressing:

  • Add all dressing ingredients into a bowl and whisk to combine.
