Ingredients
For the Salad:
1pintorganic heirloom cherry tomatoes, washed and cut in half
1Avocado, diced (peel and pit removed
1/2largesweet onionjulienne cut
For the Cilantro Lime Dressing:
1tablespoonfresh squeezed lime juice
1 tablespoonred wine vinegar
1/4cupolive oil
2clovesfresh garlic, minced
1tablespoonfresh cilantro, minced
1/2teaspoonkosher salt
1/4teaspoonsmoked paprika
freshly ground black pepper, to taste
Instructions
For the salad:
Put the halved tomatoes, diced avocado and julienne onion in a bowl
Prepare the dressing as directed below. Pour dressing over the tomato mixture and gently toss to coat.
.Adjust salt and pepper if needed. Garnish with some cilantro. Enjoy!
For the dressing:
Add all dressing ingredients into a bowl and whisk to combine.
