Cucumber and Heirloom Tomato Pico De Gallo:

Ingredients

  • 1 cup diced persian or english cucumber seedless cucumber
  • 1 cup diced heirloom cherry tomatoes
  • 1/2 cup diced red onion
  • 1 heaping tablespoon chopped fresh mint leaves
  • 1/2 teaspoon kosher salt
  • squeeze of fresh lemon juice to taste

Instructions

  • In a bowl mix all pico de gallo ingredients until well combined. Serve on Chicken Shawarma tacos.
