- 1 cup diced persian or english cucumber seedless cucumber
- 1 cup diced heirloom cherry tomatoes
- 1/2 cup diced red onion
- 1 heaping tablespoon chopped fresh mint leaves
- 1/2 teaspoon kosher salt
- squeeze of fresh lemon juice to taste
