For the Slaw 4 cups cabbage, julienned 1/2 cup carrots, grated 1/4 cup shallots, julienned 1 cup red pepper, julienned 1 cup fresh pineapple, julienned 1 tablespoon minced fresh jalepeno, seeds removed For the Dressing 1/2 cup pineapple juice 1/4 cup seasoned rice wine vinegar 1 clove minced fresh garlic 1 tablespoon soy sauce 2 tablespoons sweet chili sauce 1/2 teaspoon sesame oil 1/2 teaspoon kosher salt
In a bowl, combine slaw ingredients. Toss to combine
In a small bowl, add the dressing ingredients. Whisk to combine
Pour dressing over slaw and toss well to coat. Enjoy!
