Ingredients
2cupsdiced (small) fresh pineapple
2tablespoonsminced red onion
2tablespoonsminced red pepper
1tablespoonminced fresh cilantro
1/2tablespoonminced serrano chile pepperseeds and pith removed
1/8teaspoonsmoked paprika
1/8teaspoonsea salt
1tablespoonfresh lime juice
1tablespoonfresh pineapple juice reserve juices from cutting up pineapple
Instructions
Peel, core and dice fresh pineapple and place in a mixing bowl.
Mince the onion, pepper and cilantro and add to the bowl with the pineapple.
Cut the Serrano Chile in half lengthwise an remove the white pith and seeds. Finely mince and measure and add to the pineapple.
Add the paprika, salt, lime and pineapple juices. stir to combine
