Ingredients

  • ½ ripe avocado
  • ½ cup mayonnaise
  • ¼ cup sour cream or plain Greek yogurt
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 small garlic clove
  • ¼ cup fresh parsley
  • 2 tablespoons fresh chives
  • 2 tablespoons fresh basil
  • 1 tablespoon fresh dill
  • ¼ teaspoon sea salt
  • ¼ teaspoon black pepper
  • 2 –4 tablespoons water to thin, as needed

Instructions

  • Add ingredients to blender: Place avocado, mayonnaise, sour cream, lemon juice, lemon zest, garlic, herbs, salt, and pepper into a blender or food processor.
  • Blend until smooth: Blend until creamy and bright green. Scrape down the sides as needed.
  • Adjust consistency: Add water, one tablespoon at a time, until the dressing reaches your desired pourable consistency.
  • Taste and adjust: Taste and add more salt or lemon juice if desired.
  • Chill: Refrigerate for 20–30 minutes before serving to allow flavors to develop.

Notes

  • Fresh herbs make a big difference—avoid dried if possible.
  • If the dressing thickens in the fridge, stir in a splash of water or lemon juice to loosen.
  • Use fresh lemon juice for the best bright flavor.
