Ingredients
2cupsall-purpose flour
1cupsugar
½cupunsalted buttersoftened
2eggs
Juice and grated rind of 1 orangeabout ½ cup juice
4large bananas3 mashed, 1 cut into small chunks
⅓cupchopped walnuts
1teaspoonbaking soda
½teaspoonsalt
1cupfresh blueberries
Instructions
Preheat oven to 350°F (175°C). Grease and flour a loaf pan.
In a large bowl, cream together the softened butter and sugar until smooth.
Beat in the eggs, then mix in the orange juice and orange zest.
Stir in the mashed bananas and banana chunks.
Add the flour, baking soda, and salt. Mix just until combined.
Fold in the chopped walnuts.
Gently fold in the blueberries.
Pour the batter into the prepared loaf pan.
Bake for 1 hour, or until a toothpick inserted into the center comes out clean.
Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
