Banana Blueberry Bread

Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • ½ cup unsalted butter softened
  • 2 eggs
  • Juice and grated rind of 1 orange about ½ cup juice
  • 4 large bananas 3 mashed, 1 cut into small chunks
  • cup chopped walnuts
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup fresh blueberries

Instructions

  • Preheat oven to 350°F (175°C). Grease and flour a loaf pan.
  • In a large bowl, cream together the softened butter and sugar until smooth.
  • Beat in the eggs, then mix in the orange juice and orange zest.
  • Stir in the mashed bananas and banana chunks.
  • Add the flour, baking soda, and salt. Mix just until combined.
  • Fold in the chopped walnuts.
  • Gently fold in the blueberries.
  • Pour the batter into the prepared loaf pan.
  • Bake for 1 hour, or until a toothpick inserted into the center comes out clean.
  • Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
