Ingredients

  • Strawberry Syrup Serve Chilled:
  • 2 cups strawberries diced
  • 1/2 cup granulated sugar or 1/3 cup honey
  • 1/2 cup water
  • 1 tablespoon fresh lemon juice
  • Sangria:
  • 3 cups strawberries sliced
  • 1 cup raspberries
  • 1 orange halved and sliced
  • Juice of 1 orange about 1/4 cup
  • 1 bottle sparkling rosé or white wine 750 mL
  • Strawberry syrup to taste

Instructions

  • Strawberry Syrup (Make First):
  • Add the strawberries, sugar (or honey), water, and lemon juice to a medium saucepan over medium heat.
  • Bring to a gentle simmer and cook for 6–8 minutes, stirring occasionally, until the strawberries release their juices and the mixture slightly thickens.
  • Mash the strawberries with a fork or potato masher.
  • Optional: For a smoother syrup, strain the mixture through a mesh strainer into a bowl, pressing with the back of a spoon to extract as much syrup as possible.
  • Refrigerate the syrup until completely chilled, preferably overnight.
  • Sangria:
  • Add the sliced strawberries, raspberries, orange slices, orange juice, wine, and strawberry syrup to a large pitcher.
  • Stir gently to combine, adjusting the amount of syrup to taste.
  • Refrigerate for several hours or overnight to allow the flavors to meld.
  • Serve chilled over ice.

Notes

Honey adds a light floral sweetness; use a mild honey such as clover or wildflower.
If using a very dry wine, you may want to add a little extra syrup.
Sangria tastes best after chilling overnight.
