Farmer's Casserole

This classic Farmer’s Casserole is a hearty breakfast made with eggs, ham, cheddar cheese, hash browns, and green onions. Baked in a creamy egg and evaporated milk mixture, this easy breakfast casserole is perfect for meal prep, holidays, or feeding a crowd.

Ingredients

  • 20- ounce package refrigerated shredded hashbrowns
  • ½ teaspoon seasoned salt
  • 2 cups cheddar cheese shredded
  • 6 large eggs
  • 12- ounce can evaporated milk
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 cup diced ham
  • Optional - 1/3 cup green onions diced

Instructions

  • Preheat oven to 350 degrees F. Lightly grease a 9x13 baking dish.
  • Add hashbrowns to the bottom of prepared 9x13 baking dish, season with seasoned salt, and bake for 15 minutes.
  • Add eggs, evaporated milk, salt, and pepper to a mixing bowl and whisk until well-combined.
  • Add cheese in an even layer on top of the hashbrowns.
  • Pour egg mixture over top, then top with ham.
  • Bake for 42-44 or until center is set and top is just beginning to brown.
  • Allow to rest for 10 minutes after baking before serving.
  • Top with optional green onions and serve
