Crispy toasted baguette slices topped with sautéed mushrooms, garlic, and creamy goat cheese, finished with fresh herbs and a squeeze of lemon. An easy, elegant appetizer perfect for entertaining or casual gatherings.
Slice baguette into ½-inch slices on an angle. Place on a baking sheet, drizzle with 2 tablespoons olive oil, and sprinkle with 1 teaspoon salt and 1 teaspoon pepper.
Bake for 8–10 minutes until toasted and golden brown. Set aside to cool.
Slice mushrooms into ½-inch pieces (including stems). Dice onion and mince garlic.
Heat remaining 2 tablespoons olive oil in a large skillet over medium-low heat. Add mushrooms, onion, garlic, remaining salt, and remaining pepper.
Sauté for 15–20 minutes until mushrooms are soft and onions are translucent. Remove from heat and let cool slightly.
Spread goat cheese on each toasted bread slice. Top with a heaping spoonful of mushroom mixture.
Garnish with parsley, thyme, and a squeeze of fresh lemon juice. Serve immediately.
Notes
Toast bread and prepare mushroom topping ahead of time; assemble just before serving for best texture.
Don’t overcrowd the pan when sautéing mushrooms to avoid steaming.
Best served fresh, but mushroom topping can be stored in the fridge for up to 3 days.
Mushrooms: Baby bellas work best, but cremini or white button mushrooms are great substitutes.
Goat cheese: Swap with ricotta, cream cheese, or a plant-based cheese for a vegan option.
Herbs: Parsley and thyme are classic, but chives or rosemary also work well.
Bread: Use a sturdy baguette so it holds up to the toppings.
