Ingredients

  • 1 teaspoon cornstarch mixed with 1 tablespoon cold water

Instructions

  • Preheat the oven to 425°F (220°C). Line a baking sheet with foil or parchment paper and place an oven-safe rack on top.

  • Pat the chicken wings very dry with paper towels and place them in a large bowl. In a small bowl, mix together the baking powder, salt, garlic powder, and black pepper. Toss the wings with the seasoning until evenly coated.

  • Arrange the wings skin-side up on the rack, leaving space between each piece. Bake for 40–45 minutes, flipping once halfway through, until crisp and evenly browned.

  • While the wings bake, make the sauce. In a small saucepan, combine the honey, soy sauce, garlic, butter, and vinegar. Bring to a gentle simmer and cook for 3–4 minutes, stirring frequently.
  • Stir in the cornstarch slurry and cook for another 30–60 seconds, until the sauce thickens enough to coat the back of a spoon.

Notes

Baking powder (not baking soda) is key for crispy oven-baked wings. Make sure it’s aluminum-free to avoid a metallic taste.
For extra crispy wings, let them rest uncovered in the fridge for 1–2 hours before baking.
You can adjust sweetness by reducing honey slightly or adding a splash of extra vinegar for more tang.
