Make the Drizzle: While the carrots roast, whisk together tahini, honey, lemon juice, garlic, salt, and warm water until smooth and pourable. Adjust water for desired consistency.
Finish & Serve: Transfer warm carrots to a serving platter, drizzle with honey-tahini sauce, and sprinkle with chopped almonds and fresh herbs.
