Ingredients

For the carrots:

  • 1 ½ pounds rainbow carrots peeled and trimmed
  • 2 tablespoons olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ½ teaspoon ground cumin
  • ¼ teaspoon smoked paprika

Honey-Tahini Drizzle:

  • 3 tablespoons tahini
  • 1 ½ tablespoons honey
  • 1 tablespoon fresh lemon juice
  • 1 small garlic clove grated (or ¼ teaspoon garlic powder)
  • 2-3 tablespoons warm water to thin
  • Pinch of salt

To finish:

  • ¼ cup chopped almonds
  • Fresh parsley or dill chopped (optional)

Instructions

  • Preheat & Prep: Preheat oven to 425°F. Line a baking sheet with parchment paper. Season the carrots by placing them on the baking sheet, drizzling with olive oil, and sprinkling with salt, pepper, cumin, and smoked paprika. Toss to coat evenly.
  • Roast: Roast carrots for 25-30 minutes, flipping once halfway through, until tender and caramelized on the edges.
  • Make the Drizzle: While the carrots roast, whisk together tahini, honey, lemon juice, garlic, salt, and warm water until smooth and pourable. Adjust water for desired consistency.
  • Finish & Serve: Transfer warm carrots to a serving platter, drizzle with honey-tahini sauce, and sprinkle with chopped almonds and fresh herbs.

  • You can substitute garlic powder for fresh garlic if needed.
  • Warm water in the drizzle can be adjusted for desired consistency.
  • Fresh herbs like parsley or dill add a bright finishing touch.
