Spicy Shrimp and Andouille Sausage

Ingredients

For the main dish:

  • 1 tablespoon olive oil
  • 2 cloves fresh garlic minced
  • 1/4 cup shallot sliced
  • 1 cup red peppers julienne
  • 2 links andouille sausage cut in half lengthwise and sliced
  • 1 cup cherry tomatoes halved
  • 1 pound large raw shrimp peeled and deveined

For the sauce:

  • 1/2 cup dry white wine such as Sauvignon Blanc
  • 1 teaspoon Cajun seafood seasoning
  • 1 tablespoon heavy cream
  • 1 squeeze fresh lemon juice
  • Salt and pepper to taste

For garnish:

  • Sliced scallions

Instructions

  • Sauté aromatics: In a large sauté pan or skillet, heat olive oil over medium heat. Add garlic, shallots, and red peppers, and sauté until aromatic, about 2-3 minutes.
  • Cook sausage: Add the andouille sausage and cook for a few minutes until lightly browned.
  • Add tomatoes: Stir in cherry tomatoes and sauté for 1-2 minutes.
  • Cook shrimp: Push the ingredients to the edges of the pan, creating space in the center. Cook shrimp on both sides until just pink but not fully cooked in the center.
  • Deglaze with wine: Pour in the white wine and let it reduce slightly.
  • Finish sauce: Stir in the heavy cream and Cajun seafood seasoning. Continue cooking until the sauce thickens slightly.
  • Adjust seasonings: Taste and adjust with salt, pepper, and a squeeze of fresh lemon juice. Stir to combine.
  • Garnish and serve: Top with sliced scallions and serve immediately.

Notes

Do not overcook the shrimp—they will continue cooking in the sauce.
You can substitute andouille sausage with smoked sausage if desired.
Serve with rice, crusty bread, or over pasta to soak up the delicious sauce.
