Ingredients
12large pitted Medjool dates
½cuppeanut butteror other nut butter
12whole pecans
1cupdark chocolate melting wafers
2squares white chocolate
Instructions
Open each date and spoon about 1 teaspoon of peanut butter inside one half.
Place one whole pecan on top of the peanut butter and gently close the date around the filling.
Arrange the stuffed dates on a parchment-lined baking sheet and place in the freezer for about 10 minutes.
Melt the dark chocolate in the microwave in 30-second intervals, stirring between each, or melt using a double boiler on the stovetop.
Remove the chilled dates from the freezer and dip each one into the melted chocolate, coating all sides.
Place the chocolate-covered dates back on the parchment paper and allow the chocolate to set and harden (this usually takes just a few minutes).
Melt the white chocolate and drizzle it over the hardened dark chocolate for a decorative finish.
Notes
Natural peanut butter, almond butter, or cashew butter all work well in this recipe.
If your dates are not very soft, soak them in warm water for 5–10 minutes and pat dry before stuffing.
Store the finished dates in an airtight container in the refrigerator for up to 1 week.
For a sweeter coating, you can use semi-sweet chocolate instead of dark chocolate.
