215-ounce cans cannellini beans, rinsed and drained
½cupcherry tomatoesquartered
⅓cupcucumberpeeled, seeded, and diced

For the Lemon Dijon Dressing:
3tablespoonsolive oil

Instructions
In a large bowl, combine the cannellini beans, cherry tomatoes, cucumber, red onion, feta cheese, and chopped parsley.
In a small bowl or jar, whisk together the olive oil, lemon juice, Dijon mustard, salt, oregano, and black pepper until smooth and slightly emulsified.
Pour the dressing over the salad and gently toss until evenly coated.
