Ingredients

  • 2 pounds fingerling potatoes halved lengthwise
  • 1 tablespoon olive oil
  • 1 teaspoon salt plus more to taste
  • 1/2 tablespoon fresh rosemary minced
  • 1 clove garlic minced
  • Freshly ground black pepper to taste

Instructions

  • Preheat oven to 425°F (220°C).
  • Wash and halve the fingerling potatoes lengthwise for even cooking.
  • In a large bowl, whisk together olive oil, salt, rosemary, garlic, and black pepper.
  • Add the potatoes and toss until evenly coated.
  • Arrange potatoes cut-side down in a single layer on a baking sheet.
  • Roast for 25–30 minutes, or until golden brown and tender when pierced with a knife.
  • Taste and adjust seasoning with additional salt and pepper if desired.
  • Serve warm and enjoy.
