Ingredients

  • 2 cups English cucumber cut into half-moons or cubes
  • 2 cups grape tomatoes halved
  • 1 cup chopped red peppers
  • 1 cup red onion julienned
  • 1 cup Mediterranean or Kalamata olives
  • 1/2 cup feta cheese crumbled or diced
  • 2 tablespoons red wine vinegar
  • 2 tablespoons fresh lemon juice
  • 1/2 cup extra virgin olive oil
  • 1 teaspoon garlic minced
  • 1 teaspoon fresh oregano minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon minced shallots

Instructions

  • Combine the Veggies: In a large bowl, mix cucumbers, tomatoes, red peppers, red onion, olives, and feta. Gently toss.
  • Make the Dressing: In a separate bowl, whisk together red wine vinegar, lemon juice, olive oil, garlic, oregano, Dijon mustard, salt, pepper, and shallots.
  • Toss Salad with Dressing: Pour the dressing over the salad and lightly toss until everything is evenly coated.
  • Serve: Enjoy immediately, or chill for 30 minutes if you prefer a cold salad.

Use fresh, ripe vegetables for the best flavor.
