Blackberry lemon blondies

Ingredients

  • 1 cup softened butter
  • ½ cup powder sugar
  • ¼ cup granulated sugar
  • 1 tsp. baking powder
  • ½ tsp. ground cinnamon
  • ½ tsp. sea salt
  • 1 tsp. Vanilla extract
  • ¼ cup Lemon juice
  • Zest from 1 lemon
  • 2 large eggs
  • ½ cup white baking chips
  • 2 ¼ cup Gluten Free Flour
  • 1 cup Fresh Blackberries (additional blackberries for garnishing)

Icing

  • 1 cup powder sugar
  • 1-2 Tablespoons lemon juice

Instructions

  • 1. Preheat oven to 350 degrees
  • 2. Line a 8×8 square baker with parchment paper and set aside.
  • 3. In a medium size bowl cream sugars and softened butter with a hand mixer.
  • 4. Add vanilla extract, lemon juice, lemon zest and eggs. Mix well and set aside.
  • 5. In a small bowl add cinnamon, salt, baking powder and flour together. Mix into wet ingredients.
  • 6. Cut blackberries in half and gently fold into batter. Be careful not to overmix.
  • 7. Add white baking chips and gently fold in.
  • 8. Spread the batter into the bottom of the prepared pan.
  • 9. Bake at 350 degrees for about 25 minutes or until a toothpick inserted in the center comes out clean.
  • 10. Remove from the oven and cool on a wire rack.
  • 11. While the bars are cooling, mix up the icing in a small bowl. Add just enough lemon juice until the consistency is what you like
  • 12. Cut bars into squares and remove from pan.
  • 13. Drizzle icing over bars and garnish with additional blackberries and lemon wedges, if desired.
