Asian BBQ Sloppy Joe’s with Peanut Slaw
Asian BBQ Sloppy Joe’s with Peanut Slaw. Classic comfort food with an Asian twist. Did you grow up eating sloppy joe’s as a kid? I did, served with crispy tater tots on the side. I loved those things!
I decided to give that childhood favorite a bit of an upgrade, a little Asian fusion going on here. And just like regular sloppy joe’s, it’s a breeze to make. Weeknight dinner has never tasted so good!
How to make Asian BBQ Soppy Joe’s
- Saute’ the ground beef, onions and peppers until the meat is cooked through and the vegetables are tender.
- Add the remaining ingredients, stir until well combined. Let it simmer together until most of the liquid is absorbed, stirring occasionally. Set aside, keep warm.
- Time to make the slaw. In a mixing bowl whisk together the mayo, peanut butter, vinegar, soy sauce, sugar and lime juice to make the dressing.
- Add the bag of slaw mix to the dressing and stir until well coated
- Take four warmed sesame seed buns split in half. Place equal amounts of meat mixture on each of the bottom buns. Place slaw on top of meat mixture then sprinkle with the chopped peanuts. Add the top bun, serve and enjoy!
